Why do commercial microwave doors fail so often?

Should commercial microwaves be on a maintenance schedule?

Why is my food heating unevenly?
Usually the turntable has stopped rotating — a failed motor, a broken coupler or a roller ring that has come out of its track. The other cause is a magnetron losing output, where the oven still heats but takes much longer than it used to. The two are easy to tell apart with a timed water test.
